Aida's Guacamole

 Aida’s Guacamole

5 Avocados, smashed with fork

½ purple onion, finely diced

cilantro, very finely chopped (about ½ C to 2/3’s C – depending on taste)

1 tsp. kosher salt (or to taste)

½ lime, squeezed

½ jalapeno – finely diced (leave in seeds if you want it really hot)

When serving, squeeze in the juice of ½ lime and mix.

Mix.  Place avocado pits in guacamole to prevent browning and place in covered container.   If browning does occur, simply stir mixture.  Take pits out when serving.

Aida is John's wife and is originally from Acapulco, Mexico.  She has "toned" down this recipe to accommodate our Minnesota bland tastes.
